I got a Great Outdoors Smokey Mountain smoker and I do alot of venison summer sausage in it. I hang my sausage in the smoker and can get 25#s in it at one time.

I would use PORK TRIM. You need the fat content that pork trim has since venison is so lean.

Are you using Pork trim? I use pork trim. I do believe the pork trim I get is about a 70-30 mix.
