I not sure if I would call it a tradition but here in Lafayette when you cook a gumbo potato salad is always the side and actually like my potato salad in the gumbo when I eat.

This Cajun does not do okra but I do make a killer gumbo. That looked really nice Kevin especially for a man living in East Texas lol. I live in the heart of Cajun Country.

There is a local sauce here called Uncles that is really good made with pure Louisiana sugar and habanaro peppers.
