You can get a Char Griller with offset and mod it out for less than $250. Of course a UDS can be pretty cheap if you gots the skills.

Have you guys tried using Scotch Bonnet peppers in your jerk? They're a little hotter than it's close relative the habenero, and it has a different flava'. The trick is finding some.

I grilled these Rib Eyes tonight. Seared 'em for a few minutes then grilled em about 5 minutes each side.

With a little Montreal Steak Seasoning and pepper.
