They can smoke anything to an unmatched quality. The only thing you might find a setback, is if you are asked to cook for a large crowd (50 plus).

You may want to skip out on the mop. Just let the smoker go and hold its temp. I find that mops impart little or no flavor.

That looks like a gas cooker. In which case the problems are just beginning.

That device looks like it will fit on any off-set if you are running out of room.

Help me here. 7.5 hours seems like a long time. What temp were you rolling at? I have done thicker cuts of salmon that turned out fine in 2-3 hours. It looks delicious...I must know. Thanks
