I hold pork butts overnight in Cambro insulated food keepers up to 10 to 12 hours. Still plenty hot after that long. You can pull with food gloves on.

I buy all my pork butts in case lot that way all the time. I never smoke just one butt at a time because pulled pork freezes so well. Especially if you vacuum seal. I usually will do 4 at a time.

Just add an exhaust on the right side and keep the left closed. You may find that using both at some time may come in handy.
