To be honest I usually just end up 1/4ing it and putting the meat in big tinfoil pans for people to pick at it as their liesure. It saves a lot on the clean up and is not hard to do.

I am one that does not use foil in my ribs. I do however spritz my ribs near the end a couple times with apple juice. I like a little pull to my ribs.

I get a lot of my bulk stuff at BJ's. But when I look at the brisket there is comes in like a huge peice of meat usually 12-15 pound.
