No meat glue. We have not tried that. Our skins stay on since we don't remove them. We leave attached and don't scrape.

I'd try to cook without the string. It's going to leave marks where its pulled tight on the thigh. Plus you have to cut it off before saucing, and they could take some time. Just my .02

I'd suggest to increase your cooking temperature. If you cook at the right temp there is no need to scrape the skin.
