You can certainly run a RF with charcoal but you will go broke feeding it that fuel. If you don't have access to hardwood I'd look at alternative energy.

I don't know if it's just me but I find aged beef cooks faster, maybe it's because the enzymes have broken down the connective tissue more. I had a dry aged 50 day brisket and it cooked really fast.

If it's in a frost free fridge it's trash after a year...to many freeze thaw cycles.
