I never did Clod--can't get it where I live--but as said, it's like 3 cuts of beef all together in one hunk.

And this hunk has done to be done REALLY slow and low.

Removing it has zero to do with how it cooks up, and minimal to do with affecting the taste or te*t ...

Depending on your cooker, starting with belly down and back up means overcooking the skin, even if foiled...because heat rises.

For most units, you're better off starting belly up, and flipping it ...

I did some thirty years ago in the days of "NON Knowing". Grilled them on a charcole grill for hours. The only peice of meat that got bigger the longer it was cooked.
