I only use the Weber kettles. They can cook anything. The UDSs rarely get used.

I normally cook ribs in the 250-300° range. Usually done in 4.5-6 hours depending on the weight of the ribs.

I always like to experiment ….

I recommend a kiln shelf instead. Available at pottery supply stores.

Might pay a little bit more, but they can handle temperatures over 2000℉.
