Google dry brining a turkey. It seems to be one of the new (old) things to do and much easier. Supposedly not salty tasting either.

Yup biggest mistake is over smoking it. Ground meat is like a sponge it sucks in smoke easily. Usually where I would use three fist size chunks of wood for a shoulder here I wood use one.

I did a tri pig tenderloin that went over fantastic. Brined pork tenderloin stuffed with pork sausage and wrapped in bacon. With a finish sweet glaze on it.

And when I mix any dry spices I always mix by parts as in five parts to one part etc. This way you can always duplicate or change it for the best results that your looking for.
