Agree with Jess above BUT love me some Blues Hog Tennessee Red in my Pork & their Smokey Mountain on my Brisket.

Butchers as a base, I normally cut it with juice or coffee pending applications ...

The only way I have had any luck doing this is by not smoking it up to the proper temp. Take it to roughly 170 and let is cool to room temp, wrap in plastic, then zip lock it into the freezer.

Cooker was running at 250, light smoke with a few apple chips thrown on for the first 15 minutes. I, oddly, have never enjoyed the fried version!
