well it stalled at 165 for almost 3 hours, butt it is climbing again so it maybe a little late lunch. The drum has been holding great for me. will post a pic when I pull it to rest.

I would flush with water REALLY well before making any cuts in those barrels. Then burn them out and clean of really well.(I take them to the car wash)

Pretty much has been said but I thaw the turkey. Boil the brine for a few minutes and add ice to cool it off before adding the turkey. I also brine for 24 hours.
