Yea, they tried in my hometown in southern ORE too and failed in less than a year.

Now another BBQ guy (independent) took over the space and has been doing quite well....for the last 5 years :sh ...

It's legal in California. One of my first jobs was working at a meat packing place and I remember gallon jugs of pigs blood that went to China Town in the bay area.

Used almond wood.

A couple weeks ago me and my brother did our first whole pig. Here it is after soaking for 2 days in Mojo Criollo. Then rubbed down with olive oil and Kosher salt.
