Under 140° for over 4 hours is considered unsafe as far as food handling rules go. If the meat is held over 140° the 4 hour rule does not apply.

With over 20 years working in professional kitchens, I am still more than pleased with my Henckles.

For your price range and needs, any of the major brands like Henckle, and Wustoff should be fine ...
