Should work like a charm. My wife and mother do sewing, a lot of sewing. they go to sewing convensions once a year, there is always a gentleman that sharpens scissors and knives.

I would smoke partway that will give the meat ball some firmness then freeze. I've seen raw meat deform in a vac-sealer before. JM2C

I have also heard to cut off a small piece across grain before cooking to show you which way to cut after.

This is the way I learned, works very well.
