We buy them for comps. Really good quality. Won first place in Owensboro a couple of weeks ago.

KCBS members get a 10% discount (every little bit helps).

I cook them the same as any choice grade ...

I really like to coat the slices with brown sugar and then sprinkle a little caynne pepper on. Grill over medium heat for a few minutes. Talk about sweet - heat.

We buy CAB Choice from US Food Service. I feel these are a real value for the money. Consistent in size throughout the case.

Can't find prime very often and not worth the extra money in my opinion. ...

Try to not have many "air" pockets in the charcoal. In other words try to layer the lump in without a lot of voids between pieces.
