The only place I have been is Corky's and I wasn't impressed. Good atmosphere, good appetizers, but the ribs were not what I was expecting. Ended up saucing them so I wouldn't choke.

If you put it on at 8, wrap it in foil about 11 with some beef consume/beef broth (one can). Let it go in the foil until it is done. (fork tender), about 203 degrees internal and then let it rest.

I have watched the show a few times. He is very straightforward. It is not like a lot of cooking shows. Everything he does is simple and it works, and he explains why it works.
