Have you tried lump charcoal? It burns clean and there is not much ash or try to get your charcoal up so you have more air flow.

I would go for 165 to 170 in the breast. I would also cut the back bone out. This does not make a pretty turkey, but a nicely cooked one.

I had a Hondo. It worked just fine. I sold for $50 and bought an old OK Joe off craiglist for $50 and fixed it up.

I slow cook it to meld the flavors and thicken the sauce.
