its a bonless shoulder from costco is just tied up with string havent checked the temp yet going to do that in about 75 minutes. cant wait for that after smoke session shower

you get sm to medium chuncks from the site not the log thats the same size as the can, if you dont have a good hard piece of wood in the can it will burn to fast. a hard chunk will last 60-90 min

i pulled at 150 because the probe slid in and out easy in hein sight i think i was pushing it in to the fat cap. it was a 6 hour cook becaseu it was a 3 lb flat

you putting chunks on top of the rocks or full sticks. i have a gassmoker.com aftgerburner, with the coffe can method.
