You smoke it to a fairly high internal temp, I personally prefer 195, for tenderness. I took one to 205 one time and it was very moist, but fell apart, basically it crumbled as I tried to slice it.

Victory Sports Bar is good, but where I normally go is Players, a nice sports bar on 21st St. about 1/4 mile east of Ridge Rd. They've got great food, and loads of TV's.
