I bought a King Kooker jalapeno rack that came with a corer and that thing works perfect. The rack and corer only cost $10 too.

I just made some onion soup last night and smoked the onions for 20 minutes on the OTG using some red oak instead of sauteing them . Turned out great.

When I grill on my Weber I use about 3/4 to a full chimney of charcoal with vents about a 1/3 to 1/2 open.I use a Smokenator when I cook low and slow. I always have rock steady temps.
