Hi all. I just started with sausages, so everything is both interesting and confusing at the same time.

I just finished my first batch of chicken sausages. They LOOK great. Don't know what they taste like yet, they're developing thier flavor in the fridge.

It's amazing how things get clearer, once you actually do it. I did this first batch with my Kitchenaid grinder and stuffer. Grinder works fine, stuffer not so fine. I also just recieved a 5 pound vertical I purchased from Grizzly. I'll use that stuffer next.\

This is a lot of fun..... And to think, butchers actually get paid for making sausage.. Wink

Thanks for sharing that. I have a Kitchenaid and was trying to get the courage to try some sausages myself. Let's us know how they taste and some pictures.

Looks great to me. Lets have some samples. I am going to try making some buckboard bacon, starting in the morning. Just received all my ingredients today.
