We got to fire up the New Smoker this weekend for the first big smoke (for us). We had never cooked this much meat ever - so it was a real challenge for us to do it. We got each Boston Butt we cooked sold to someone which made it nice, but we undercharged folks (as we are new and want to get our name out), which we will never do again. We also had to use our small offset and WSM as the larger smoker did not hold as many as were told (thought). It was no big deal - just now we know.

We used an injection on all of them and the rub used (which turned out great was 60/40 Butt Rub and Sugar in the Raw. The rub turned out great! The injection was good - maybe just a bit heavy on the salt.

The experience was good - it just took too long for the butts to finish (24 Hours). Mostly it was due to our first use of the smoker fully loaded and learning how to keep the heat constant. All in All we had a great cook!

Looks great! I do like that Bad Byron's Butt rub. I will often add a little turbanado sugar to it but great stuff.
