I made about 15lbs of freash polish sausage and put it in the freezer. Can I smoke it now or do I need to make another batch with different ingredients???

You can smoke it however it would have been better to smoke it right away

The answer to that question is it depends on the temp you are planning to smoke it at..below 200* you should use a cure.

Usually you would smoke it right away...

Did you use a cure? If so...did you let it sit overnite for it to get into the meat?
