This is Demopolis' "Christmas on the River" Annual event.

Anyone from the "ring" going to be there this weekend? Loose Cannon will be there and we have been assigned cook space 28 (whereever that is). This is our first time in Demopolis and we are really looking forward to it!

We were hoping to make it down but with the purchase of the new smoker we are not going to be able to make it.

Its a great event! Here is a link from the Ring on last year's write up.

Last year the weather was cold cold - and we had to battle the elements (tornado) on Thursday night.

Great event organizer and alot of fun at the competition. Good Luck and remember to post some pictures!!

Jeff,

As of today the weather looks a little more promising for us Cool ! Stinks that you will not be able to make it this year!

We will have a great time and hope in the process we place high in the competition. I will take plenty of pics and post next week.

I will post the appearance scores later this week. Here are the boxes we turned in.
We had a good time and enjoyed the competition. Suggestions and critiques on the boxes are welcome.
We placed 27th overall.

Hey Cannon,

Nice looking boxes. How did you slice your brisket. JUst trying to figure out the verticle marks.

I would like to see a little more bark on the brisket, kind of looks like a roast.
Man, your pork looks good. Great bark.
Nice ribs, maybe a little more color Massive thighs.
And maybe a little more work on your lettuce.

Thanks for the comments. The brisket was sliced with an electric knife. When you say a little more work on the lettuce could you explian exactly what you are referring to? Thanks for your time!

Dan,

When you look at the lettuce in the Chicken and the Brisket have a better look. The crinkly edges show well. But then look at the lettuce in your rib box. It looks more flat, almost like you would for fixing a sandwich. The edge of the lettuce is going to look more decorative.
I know these are little things, but when you get the food looking good. Don't let the lettuce pull you down.

Hey Dan,

Great Looking boxes,

Brisket-

I too wonder about the sawing cut on the brisket? Box looks nice and full
But I think the ends that are in there take away from the overall apearance of the box. Might have been nice to add the burnt ends chopped? Just a thought

Pork-

Wow that's a lot of pork, Looks great, Almost too full But I don't think that would take away anything from it. Nice job

Ribs-

Again they look nice, But the meat showing almost apears to be a little dry. Mabey a spritzs with some apple juice or paint with sauce.
Just a sugestion and I can't say it will improve but just a thought,
How about loosing the 2 ribs on the sides and fill with lettuce Not alot but another layer or 2 just down the sides.

Chicken-

I think that is the weakest of the boxes, Need to trim the thighs up so they are all the same size and fit into the container better, We have started trimming and then rolling, and toothpicking ours before they go on and be sure to remove them! I got DQ'd at a comp this summer from a dang toothpick that made it to our container!

All and All they are some kicking containers. None of this was meant with any mallace just what I see.

Very nice, Where did you place? Your chicken got better scores than I thought it would have. And pork got lower than I would have guessed.

I just went to a judging school last weekend and man I couldn't believe the disparage among scores~! We (meaning our team) Would score something well and half the class would give it a 5! Hard to tell what others are seeing, I guess.

We placed 27th out of 33 teams. That is what is so hard to figure out about this competition, we turned in what we thought was our best stuff so far and came out with our lowest finish so far??? go figure....

Your appearance scores are pretty decent, so if you finished that low either all of the scores were unusually high, or you got dinged pretty hard in taste and tenderness scores.

I am stubborn and have been fighting brining my chicken but have now concluded that I must try that at my next comp. I am satisfied with the appearance and tenderness scores for now but taste is still low through two comps on chicken. The pork taste scores with two 6's are surprising to me, I am using rub only on pork, no sauce and not injecting, I guess I need to explore those options as well. We will see what the next comp brings!

From my highly untrained eye I offer the following...

Brisket - slices look really thick to me. Should be about the thickness of a pencil. Maybe just the angle of the picture. I would turn all of the slices the same direction. Wider ends on same side. I would not put the little ends on the side if it was my box. I think the saw looking cut would take away some on the appearance.

Pork - the box looks really, really full. It is a great looking box. I think the bark piece in the center of the pulled pork could be left out and it would make the overall appearance look better.

Ribs - I think the lettus in not nearly as good as it is in the first two boxes. If if was my box I would leave the two side ribs out. When you put them on their side like that it brings in the "does the meat look dry" question.

Chicken - To me this box is not bad. We struggle with our chicken also. We are working on pretrimming the thighs to make them more uniform in shape and size. If possible maybe turn the top and middle thighs on the right hand side to hide the exposed meat where the skin has shrunk up.

Please do not take this as a slam or anything like that. Just my honest opinion. I do not have the nerve to post our boxes and ask for feedback Shocked

Appearance is the lowest weighted score. Focus on taste and tenderness and you will do just fine.

No offense taken at all, I would not post the pics if I were not asking for help or suggestions. Thanks for the comments and suggestions you provided.

The chicken we turned in was not sauced. I thought it was good enough to turn in "dry" and now that I have thought about it a while and did more research that may not have been the best decision.

The pork box may have been too full, I was proud of my bark and wanted to show it off. The chunks of pulled pork did not appear that big when doing the box, I got home and looked at the pics and knew then that the box may have been too full. The pork box was not sauced as well.

This was only our third pro comp and we think we are coming along nicely, we are having fun and drinking plenty of beer and that is all that matters right? Laughing
