I made these tasty treats for a small cook out. OMG AMAZING!! I used breakfast sausage, thick sliced bacon and dark brown sugar and cooked on the grill till bacon was crispy. You will have some flare up so keep a water bottle around . |

Question on these pig peckers - what type sausage are these - breakfast links and when you cook these do you lay them directly on your grill/smoker or do you rest them on a pan?
Cooking this weekend and these look like a good appetizer for the crowd before the main event gets off the grill.

The ones i use are a Farmland brand skin-less sausage link.

Just wrap a strip of bacon around and secure with a tooth pick and dust with your favorite dry rub or just plain ole brown sugar. Place directly on the smoker or grill grate. If on the grill move them over to the low heat side, ya know indirect heat. People love them. What better snack than bacon and sausage.
My naughty wife was the one who named them. Or at least that was her first though when she took a look at them. So in a mixed crowd you might want to re-name them.  |
