Hello KJ,

The festival is Memphis in May...18th......I am about to book the ticket in the next few days.......

Looking to meet some "pit smoke restaurat owners" so that I can learn
more regarding this trade.This is prime on my list for now.

Just to let you know about new idea regarding cooking that I have seen in Erope that I liked: in a big earthware dish with the lid..place leg of lamb or pork with potatoe thick slice and herbs....salt and so on..... place lid on and place hot charcole on top.....2-3 hrs cook time.... beautiful.
Other is with same way but milk added....milk would thicken to small lumps and taste great.
