I don't usually care for macaroni salad, but this one is excellent, nearly a meal in itself. Get slabs of the cheeses and the salami and cube it up instead of using the sliced or shredded stuff. Best made the day before serving...add addt'l mayo before serving to smooth it out.

16 oz. elbow noodles
1-C. celery, chopped
1-C. white onion, chopped
1-C. red onion, chopped
1-C. medium cheddar cheese, fine dice
1-C. smoked provolone or Swiss cheese, fine dice
.5-C. parmesan cheese, grated
1-C. dill pickle, chopped
1-C. salami, fine dice
1-6 oz. can large pitted black olives, chopped
1-C. green olives, chopped

1-2 Tb. garlic salt
1-2 Tb. minced garlic
.5-tsp. white pepper
1-2 tsp. fresh ground pepper
.5-tsp. cayenne pepper
.5-tsp. dry mustard
.5-tsp. celery salt

1-1.5 C. mayonnaise

Cook macaroni, rinse in cool water, let dry slightly
Fold in all chopped items
Refrigerate 2 hours to overnight
Mix spices, fold into macaroni, add more mayonnaise if necessary
Refrigerate 30 minutes to one hour before serving.

Jim Bob,

My Dining Facility will be hosting a birthday party tomorrow celebrating the Army's 230th Birthday. I was about 30 minutes from putting together about 200 servings of traditional Macaroni Salad until I saw your recipe, I will definitely use your recipe tomorrow and let you know how it turns out. If I could figure out how to make digital photos smaller, I would post some to share with everyone but until then, I will just have to let you know how it turns out. Thanks for sharing,
