I want to know the best way to do country stile pork ribs, I know I have to rub them down or put them in a marinade, do I use the 3-2-1 method, one of the store's up this way was having a sale on them this past weekend, I paid for 10 nice ribs(about 1" thick) $7 a pack and only found 2 packs that were left, so I want to hear from all the pro blue smokers out there the best way to do them, I don't want to screw them up. Confused

iv ben making these for years, and people will go out and buy the ribbs and what ever I need just so I will make them.
get the boneless country ribs, if they have a thick fat cap trim it a little.
get a cleated meet hammer and beet them to death, till they are under a half inch thick, thinner is better.
cover with some good dry rubb and hit them a few more times on both sides.

mix up some good sause with some brown sugar, and chipotlie
dredge the ribbs in the sauce and lay them over the grill, after about 4 minuits pile them up. pileing will cook them slower and make them more tender. Keep moving them, rotating whats on the bottom to the middle or top, they are done when they firm up (not floppy) .
they make a sandwich that you will love( I compare them to what the mcrib should be)
I made these before I discovered smoking( yes I discovered smoking Rolling Eyes )
I cooked them on charcoal with the lid open
