I know this has been asked before and I must of missed it but I need to know what temp and how long to smoke hot peppers, a friend of mine from work has giving me some hot peppers from South America(Limo Pepper) where he's from, once I smoke them I will put them into my dehydrator some will be left whole and some will be ground into powder for my rubs. My old, dead dehydrator worked at around 120*f. That is the temp I'd shoot for with heavy smoke. Time, I have no idea so maybe you should experiment with a like sized/fleshed domestic pepper. _________________ The Demolition Man - Demolition Man BBQ |

Generally around 150F, lower is positively OK. You do NOT want to cook the peppers and that will happen if the temp spikes. For me, that has been the hard part - keeping the temp down.
In mexico they are smoked until dry, several days. I only do mine about 6 hours and still get great results, have to dehydrate them after.
I always scrub the heck out the cooking grates before smoking peppers. Don't want grease on stuff to be dried and stored.
