I had it once when I was younger and since I have gotten my smoker, I have been meaning to try my hand at smoking carp. Anyone have a good recipe? |

Let us know how it turns out. For having such a bad name they are a good eating fish. My only complaint is all the bones so I am wondering how that will work for you. |

Around here we have the Asian carp that jump in your boat, if they land in your boat you have to keep them so I tried smoking one. I cut the head and tail off, slit it and gutted it. I then scaled it. I brined it in a basic salt/sugar brine with red pepper ,garlic and onion. I smoked it at 225 till the meat stopped dripping fat and the skin lifted off. I cant lie I thought it was going to be bad but it was great. I have one in the freezer now waiting for when I want to smoke it. |

If you are talking about the common carp, I would recommend the smaller fish. When cleaning them, remove the mud vein. _________________ Brinkmann Smoke 'N Grill

You can find about two dozen good recipes for carp, just google it. I've had it smoked, canned, pickled, presure cooked, and fried. It was brought over here from Europe as a food fish. The carp is a delicacy to the Germans. During WW 2, Americans showed their Anti-German setiment by harvesting those fish and slitting their bellys, throats, cutting off fins/tails and releasing them back into the water. Up until that time, they were common table fare here in the US. Well after WW2, that "ritual" stuck around. That's why today you see people throwing those so called "trash" fish up on the bank. They were taught to do that by their elders, or have seen others do it. I've taken people fishing for carp before that have never fished a day in their life, and that's all they do now. It's not just because it's not good table fare, its because of the past history, and how those things play down from generation to generation.
And for the record, carp were introduced into fish farms in the US in the mid to late 1800's. The fish were reared there and stocked as a food source during the depression times. This was done by the US Fish Service (US Fish and Game Service now).
come spring I'll be bow hunting them and cooking them.

carp are nasty slimy armor plated creatures. I would not eat one but love to catch them. They put up a good fight on lite line. _________________ "if you cant cook it in bacon grease it ain't worth eating"

ive eaten them when i was a younger man,,, there not that bad ,, you do have to get that mud vien out tho,,, i think its the way people look at them as a garbage fish that gives eating them a bad name,, i would think smokeing them that the bones would just pull right out,,,,,,,,, _________________ a dime is a dollar with the taxes taken out |

I've eaten these a lot here in Asia. They're cold smoked and a great appetizer with beer.

Makes a big difference were they are caught.
Carp out of the Mississippi river-you might as grab a handful of mud and add a stupid amount of bones.
Lake or clear water carp-edible but the same with the bones.
.
Like The_ogre25 said. Asian carp are surprisingly pretty tasty and I would eat them any day over the grass carp.

Best carp recipe I've ever tried is to place the carp on a good cedar plank. Season it up really wel, and smoke it when its done. Throw the fish away and eat the board [list=] |
