I figure temperature around 250-275, and about 4 to 4 1/2 hours. Any suggestions? I've done em' on my smoker and I've done em' on gas but never charcoal. Any help would be appreciated.

Catch the dripping somehow to prevent flare ups.

One thing I found is to keep them moist. Mop them and add BBQ sauce at the end. What kind of a grill are you using?
