I'm seeing a lot of advertising space on that new fence of yours.

You may be able to barter advertising space for supplies and services, etc.

This is Phils sister, I have been reading this since it all began, you all have no idea how much this all means to my him to be able to do this, when my father gave him the smoker when he was in the hospital it was a very emotional moment, it just came out of no where from my dad, my brother took a piece of my dad back to him to Mo when he took that smoker, it was hard for me to come home and not see that thing sitting in my yard! I knew when Philip took it home that it was a defining moment for him, things were seriously about to change, my brother has worked his butt off for the last few years and in his heart was just not in it, well I know it is now and it will remain to be, my dad is so proud of him, he gets so choked up when Phil calls, he is so happy for him, we all are. You all only know him from this board, he is one of the most organized, clean to the point of OCD people I know and the man can cook! There is no way that this will fail and we are all so proud of him, he has had a hard time getting this going and he has had some days I know that he has wondered what the heck have I gotten myself into...Philip, you are going to be fine, you have what it takes and your whole family is pulling for you.
I will see you soon and you better have a pulled pork ready!

My Dad gave me his prized lil custom built cooker &
I was able to cook many times for him using the knowlege
he had given me thru the years (he really was surprised
that I had taken the time to absorb Laughing ) In fact I cooked his
last meal on it. May your family continue to be blessed with many

Thanks for the warm welcome, you guys are a great bunch and I know Philip appreciates all of the advice amd encouragment that you have given him in the last few months. The only thing that I wish is that he were here in Florida with us, it would be great to be able to help him out, we are so excited about the trip up there in a week or so, dad is well enough to travel as long as we take it slow. I know my dad and my brother and I know that they need at least one day to do this together and that is the purpose of the whole trip. This is giving my dad something to look forwad to and I know that males Philip happy also.
Now, I have one question. I want a true recipe for the South Carolina or is it North Carolina BBQ- the clear vinegar based one. I have had it once and I loved it!

One from a friend:

2 cups vinegar
2 tablespoons salt
1 tablespoon red pepper flakes
ground pepper if desired

This one I use here:

1/2 gallon cider vinegar
1/2 cup ground red pepper
2 tablespoons salt
couple thick slices lemon

My lil' Sis Jennifer had me a little teary-eyed with her words....

You can't begin to understand what a blessing she has been for me (and for our dad!)
If if weren't for her....Our dad would probably not still be here today.
She is the best caregiver/nurse ever...and no she's not really a nurse. Wink

I feel that vinegar sauce gets better with age, I like to let mine sit for a few weeks for it to come together better, you may find the same is true with yours.

I had to join the site to ask a question. I was wondering how you can use a
cooker for a takeout service that is not nsf approved. I dont see how the
hd can ok that.

Yesterday we hauled the big smoker to the shack.....

This morning (Tuesday, March 16th)
I was headed to the shack with my dad's smoker trailer.
I was about halfway there on I-70 (about a 7 mile trip)
and trying to pass a few cars when the grill hit a rather large bump
and CAME LOOSE from the truck! Shocked
Thankfully I had 2 sets of chains hooked up.
I did check the hitch and securely has the hasp locked down...
Somehow it must not have been seated properly. Embarassed
The grill was all over the road behind me
going left and right with the tounge
dragging on the road all the way.

Behind me were several tractor trailers and
pick up trucks and I could see them in my
rear view mirror trying to slow, stop or get over!

It was a very dangerous situation to say the least.
I managed to get it safely off to the side of the highway.

By the time I got it stopped the tounge
of the grill tralier was jammed under my truck...
I had to drive forward some to be able to get to it.

I managed to pick up the tralier tounge and
placed it back on the truck hitch.
It was very heavy!
I must have has a lot of adrenalin going! Shocked
Traffic was just flying by!

I did get the grill to safely to the bbq shack in one piece...
and no one got hurt.


Here are 2 pictures after I stopped on the interstate....


The only damage was the lighting wires got pulled apart
and the trailer stand (notice the bar sticking up in front)
that broke off as it hit my truck.

Today, after my close call on the highway with my dad's grill
I had my inspections!
(The Fire Dept was yesterday and I had to go buy a
$180.00 K type fire ext!,
but passed the inspection no problem)

The health dept inspector arrived at about 2 pm today.....
looked at the grills and the fenced in area
and then went inside....NO PROBLEMS!

I PASSED THE INSPECTION! Very Happy

I only need to put some trim at the bottom of my grease trap.
Everything else was fine...including my BBq Smokers Wink

The Building inspector arrived just
as the HD inspector was leaving...
He was there about 5 or 10 minutes and
I passed that inspection no problem.... Very Happy

I need a new bathroom exaust vent flap cover outside,
but no other issues!

Then the Food rep from Menu Maker arrived
and I placed my food order.

GRAND OPENING DAY FOR SHOTGUN PETE'S BBQ SHACK
IS FRIDAY, MARCH 19TH 2010!!! Very Happy


I have a lot of organizing and
some shopping for some supplies to do
and a million other little details to get done before Friday.

Thursday is the first food prep/cook day.

If I get any pictures they will be posted.

I have work to do....be back with more soon! Wink
