Hey all
I am looking for someone who owns a bbq joint in a city with about 40 to fifty thousand people in it. I am going to start writing my buisness plan and it might be helpful to get some information from some of you. I am lookin for you average amount of customers for each meal period, per day if possible.

I am not looking for someone to post it on here, please email it to me. I wouldn't want your competitors to get the info. I am in wisconsin, so prob not a competitor for most of you.

Not worried about the competition here, We are the competition!
Let me know how your business goes in Wisconsin. I have friends from the Green Bay area, and cant imagine cooking outside in the winter! What do you plan on cooking with- I'm sure an indoor commercial smoker? _________________ BBQMAN

I have a trailered pit right now, but when i get going on the restaurant i am thinking of a oyler or southern pride not sure yet. For some reason nobody on any forum will reply to this kind of post. They act like they are keeping some black program secret. if someone would ask me the same thing in three years i would answer no problem. I am sure i could help some of these guys out with some record keeping things. my culinary school is big on food cost, inventory, and big catering events.

Nice lookin pit you got there!
I had the same experiences as you getting started. While there are not to many actual secrets, it seems that a lot of folks out there seem to think so!
I only have the personal experiece of a successful mobile BBQ service. I also live in a very large metropolitan area (3 million), with good year round weather. Your area has some obvious hurdles to overcome. I'm sure you have checked out the catering section here at the ring- a lot of good info and good people here!
