Sorry no pics of the process , my 3 friends and were just way to hung over at 8 a.m. to take or even think for that matter . . .
But the finished product . .
My homemade sausage
5 egg omelette with poblano pepper,scallion,pepperoni,shi-take mushrooms,horseradish cheddar
Sams club thick cut black pepper crusted bacon . .

LOL . . I had put (s hitake) in the post but it came out lookin like i said s--t (poop) . . I had to edit it to the Shi-take mushrooms so you could read it . . didnt realize the profanity setting was that sensitive Smile

I am on a foodservice forum and it automatically editted cocktail to c**ktail - I asked the moderator what kind of a foodservice forum edits "cocktail"?!?!? He fixed it the same day. Very Happy

I don't have a link but if you do some searching you'll figure out what it is. Basically it's ground sausage flattened out into a sheet, filled with your choice of goodies (many use breakfast foods), rolled into a log or pocket, wrapped in a bacon weave, and then smoked for a few hours. I've never done one but the ones posted on this site look great. I'm finishing my UDS this weekend and after ribs and a pork butt a fatty will be on the menu.
