I made some good baby backs for my first time but problem is I tried serving it like spares and slicing between each bone. When I did that they started pulling off the bone too easy and while were fantastic was not exactly uniform.

For a slab of baby backs is it better just to cut it in half...thirds...quarters or can cutting it in between every bone be possible and there is something I'm missing?

I don't know how you cooked them but it sounds like you foiled them a bit too long... I've done that with spares and the meat falls off the bones. Kind of takes the fun out of eating the rubs...

No foil....in fact I tried that once and didn't care for it and thought it was overated. Also, when doing it before without foiling I always didn't cook it long enough.

In any case I already marinated a rack with grapefruit (which worked the first time and tasted great) and simple already made pork rub only difference is instead of using lemon pepper with the pork rub trying jamician jerk.

I guess I'll cut them into 4's when I'm done... Confused

Sharp knife! if you keep hitting the bone while whacking through the slab and messing up your ribs, try standing the slab up and cutting between the bones.

I like to serve spares individually and BBs in sections of 3...don't ask me why, its just what I do.

Almost everyone I feed eats around a half rack of loin backs, so I cut and serve them that way. One rack, one cut, they cut/tear them up themselves. If they don't want a whole half, there is a knife at the table so they can take what they wish.
