pork loin from sams for thanksgiving

i am going to pass on the usual turkey and ham this year. i have smoked the pork loins from sams before and i love them. but, i have never paid any attention to shrinkage. can any of you help me with this?

Count on about a 15-20% loss in weight after cooking, from what I recall.

Brine it and you will have less shrinkage than Charlie quoted

The one in the Middle is a Pork Loin "Amazon Brown Snake" ... on the left a Bottom round, and to the right an eye of round.



The shrinkage isnt too bad at all, hardly enough to notice.

Just cook 2 whole ones Cool

Leftovers make WONDERFUL subs & sammiches...

I brined one in 50-50 beer & soy sauce..excellent!

Brine it! No real loss, Will hold for quite a while once up to temp - hard to mess up, quite tasty!

I have a fairly large pork loin in the freezer from an FFA pig that I need to cook at some point. I am thinking that maybe that will be my next smoke.
