I tried the potato thing but I have no idea on its impact.

Just like any hydrophilic membrane in salt water the salinity will balance out. Salt will be pulled into the potato and the salt-less water will come out.

The potato flak thing I don't get.

Its probably more effective to change the water more often...

I really don't care what the science says one way or another.

Having tried soaking in plain water only, and adding potato flake to the soak water... It seems to work for me, and I wouldn't do it any other way.
