Folks, it has been a long time since I last posted, so let's do some ribs on the eve of Christmas Eve:
Early this morning I had to go pick up an order at my local butcher shop and as I walked in I saw some baby backs sitting there just looking like they needed to come home with me. Hey, its Christmas...baby backs could be a new tradition.
Get the ribs going:
Pull the membrane and then slather ribs with plain yellow mustard.

Apply the rub:

2 parts McCormick Montreal Steak seasoning
1 part Seasoned salt
1 " Old Bay Seasoning
1 " Smoked Paprika
1 " Coriander
1 " Brown sugar


Lets get smoking! On the pellet smoker at 2 p.m. Using hickory pellets.

Place in the smoker at 200 F for 3 hours (the temp does rise to about 300 at the end)

Spritz with amber beer every 30 minutes


Place in foil with a few gurgles of beer to help braise the ribs. Wrap loosely. Cook for 1 hour in 350 F in conventional oven.


Open foil and apply glaze, then cook for 20 -30 minutes. This glaze was a bottled sauce cut with my BBQ (NC style) vinegar.


6:30 p.m. = Chow Time!

Ahhh! RIBS on the eve of Christmas Eve.....might be a new tradition.
Oh man, I'm full!!
