gonna have to give those carnitas a try tonight Wink ive seen Dennys and Mrs K.A.M.S now i want my own Laughing after talking with Killswitch im gonna use the lime and salt soak ,, ive got the pork all done up and will pick up the rest of the goddies while im out and about today,, the pork i got was already cut up just for carnitas ( wal-mart ) ive been looking forward to this for a couple days now Wink

I have been looking at recipes on the web. Are you going to cook the pork in lard?

didnt get to cook them last night due to work but we will this night ( sat ) went down and got some lime juice and gonna put the pork in a soak for dinner,,, and yes ive got a big ole tub of lard Laughing ill try and get some pics with Denny's camera Rolling Eyes i want to show off my disco witch was a first place prize for the local chili cook off Wink

I'm sure yalls food is delish, but actually carnitas Tex-Max style is cubed pork thats more like a stew than fried.
carnitas con calabaza is pork stew with squash.
the usual Tex-Mex ingredients include chile powder, comino, garlic and onions, usually with corn added.
served with hot corn tortillas

No problem, i am trying to get over the whole simmering in lard thing. I got a few extra pounds and dont need to add anymore. But damn the whole pork in pork cooking is sounding sinfully good.

many decades of eating local Tex-Mex usually has pork carnitas as a type of stew.... maybe it's a San Antonio/South Tex thing...
never seen 'em breaded and fried...
not knocking fried pork, just what is around here.
calf nuts on the other hand are dang good rolled in cornmeal and deep-fried... little horseradish and ketchup sauce... like I said... food in pics looks delish
