Did my first pulled pork last night and when i say last night i started at 1am and was expecting cooking till 5pm 8pounds x 2hrs per pound. To my suprise i hit the temp of 190 at about 9am. Im not sure what happened i kept the temp at 250.pp was good but the time thing bothers me. I dont know how to plan the cook time for my next cook.im thinking that my smoker thermometer could be off or the probe is not long enough only sticks out of the door a inch.any thoughts or comments would be appreciated.
Thanks.

What are you cooking on?
You may have an inaccurate thermometer, but I have done 8 lb butts on my Weber kettle in ten hours with temps between 250-275. Next time start at 6AM and you'll be golden.

You can check your thermo by putting it in boiling water. That was a fairly fast cook. I would have expected more like 12 hours.

Since there are no pictures, you must have cooked an imaginary butt Sad
