Inaugurated my New Braunfels Hondo yesterday, with two racks of babybacks. I rubbed with mustard and a prepared rub from Jack Stack, a local institution in Kansas City.
The Hondo runs pretty hot since the firebox needs some modification to make it more airtight, but the ribs were fantastic with the spicy zing from the rub.

Thanks, guys! I'm going to try some other rubs, including Pig's Worst Nightmare Apple Rub. These were quite spicy, which I love, but we might want other flavors.

Other than running hot how do you like that Hondo? I hear they are quite a bit bit heavier material than the Chargriller Pro like I have. I have been thinking that the Hondo might be my next smoker/griller. I built a charcoal basket for mine and loaded it up to do the Minion Method. I could tell a difference in the rust on the SFB after the 5 hour smoke I did this weekend. Thanks in advance for any info. _________________ UDS

I have a Hondo (15 years now) and I found that a crude baffle will help you with the temps. I flattened a foil tray out and positioned it over the hole between the firebox and the smoking chamber. It's helped me even out my temperatures and is a cheap fix.
Baby backs look really good.
I don't know about the new Hondos. Mine is from back when New Braunfels were actually made in New Braunfels. Char-broil bought them out and changed the way they were made shortly after I bought mine. I'm told they are thinner metal than they used to be. I haven't seen a newer one to compare them. |

Thanks, guys! This one is much heavier than I expected, and I like almost everything about it. A baffle, tuning plate, and charcoal basket are next on the list of mods. (All I've done so far is extend the stack).

These Hondo's are tough to find on the web. I went to Lowe's, Home Depot and even Charbroil and they are coming up. Anyone have any suggestions? I am just about to plan out my own Hondo style and built over the winter. _________________ UDS
