Thank You Tony, I understand your dilemma. Debbie and I started getting the kids and in-laws buying them during the holidays while the get a turkey for .39 a lb with a ten dollar purchase was going on. We pay for the turkey and all is good. This year between our daughter and her mother in law we had 11 birds in the freezer before Christmas for a total of about. 50.00.
Thank You Old Smoker.
Thank You SmokeHound, I am glad to see you back on the ring and posting.
Thank you Griffin, We used R/O charcoal and eight Oak wood chunks on the 22" WSM.
Thank you Whitey, Quit bar hopping and taking pics of the locals and get your Great North west A$$ home so you can cook up some grub my Brother.
Thank You Dan, Watch for the leftovers tonight they are going to be off the charts. _________________ Always remember slow and steady wins the race.

Whitey, give me a shout when you get state side and settled in Brother.
Thank You Tom, we never trust frozen birds after the Holidays that is why we buy them frozen and control our destiny. I do not trust frozen turkeys in the stores you never know. _________________ Always remember slow and steady wins the race.

Big bird is looking good Kevin. I always get bonus points from Mrs k.c. when I do a turkey....definitely her favorite. Plate looks mighty fine....Iit's been too long since I've seen some greens and cornbread....now I'm like the other poster and can taste them with some good pepper sauce. _________________ http://kchawgskitchen.blogspot.com/

Thank You k.c.hawg, Yep it is nice to get that little tickle in the back of your cheeks thinking of the pepper sauce on the greens. _________________ Always remember slow and steady wins the race.

That plate looks awesome. Did you brine the turkey? I have yet to do one but am chomping at the bit. _________________ Nate

Thank You SnoValley, No brine on this one we injected it with a poultry broth and rub mixture we have been working on. _________________ Always remember slow and steady wins the race.

Thanks, I need to find a good injector because I do not have the room in the fridge to brine. I guess I could use a cooler with ice but would rather not. _________________ Nate

SnoValley, we feel the same way and reserve brining turkeys for the Holidays. I use my 6gall. ss gumbo pot but it requires my 12quart ice chest as well. We love to brine but also love a good injected bird as well. _________________ Always remember slow and steady wins the race.
