I was going through the freezer last week and came across a Monster Boneless Butt I had tied, rubbed and Vacuum packed.

I put it out to thaw a couple of days ago and got crazy busy at work and did not start it until 2 am at 225 F (Sorry no pre cook pic) this morning. It plateaued at 151 F for almost 3 hours. Pulled and foiled at 169 F as I always do. Just topped 190 F at 7:40 it is resting as I type this.

Off to get a post cook Pic for you all. (the pan is just to make sure I don't loss any juices)

Looks great! I did my first butt Embarassed for a family reunion a few weeks ago. Put it on around 5pm and took it off the following day at 11 am. Foiled at 190 when I took it off to rest. Probably one of the easier cooks I have done and the results were excellent. Moist and tender with great flavor. Very Happy

You just got to love Butt. One of the easiest cuts to deal with. Pretty hard to mess one up.
