Hey all,
I am going to be smoking some St. Louis Style ribs tomorrow. I am also going to be knocking out some yard work, and doing the oil changes, etc. etc. Point is, I don't want to mess with foiling and spritzing and all that jazz. I have never smoked ribs without foiling. How long can I expect them to take? I'm figuring about 225 degrees or so.

At the same pit temperature it'll take round about the same time as foiled ribs. Any difference won't be that much. _________________ Somewhere in Kenya...a village is missing their idiot. |

I never foil my ribs. I find them to be much better without foiling while cooking, as long as you pull them off at about 160F. I usually let them rest in foil for a little while before eating. |

you can certainly do them unfoiled and will come out just as tender. i'd say start checking them at the four hour mark. do the probe test bend test etc. the probe test between the rib bone is a good indicator (goes in like butta) that it's done.
did two rack of spare ribs last week and cooked em for roughly six hours. a tiny bit over cooked as they were fall of da bone but still yummy and tasty. |

I typically foil too.... but would like avoid doing it...
though in my drum I tend to get a charred underside on my ribs and I'm not sure what I'm doing wrong.
I have a typical UDS basket and I do the minon method and start with a hi-c can full of coals in the center of my basket...
I must be getting to to hot but I have to to solve this issue other than trying to move them around alot but then that means more time watch when I got other things to do .. such as the author of the thread. _________________ Weber Performer
