| Hope this isn't a 'repeat' post but, has anyone used JD old#7 oak wood chips for smoking?I bought a bag of them and they are made from chipped-up old oak whiskey aging barrels.BTW,these oak barrels are what gives Jack it's color.When you open the bag it smells like you poured a half gallon of Jack right in the bag.Very saturated chips but dry.Just wondering what it will do to the meat,or should i mix them with regular oak if too strong of flavor.Thanks for your input. |

X-Roughneck, I have used them a time or two before. What I have done is mix the chips with some pecan chunks and had pretty good results. The pecan wood is a bit milder than the oak chips so it gives it a sort of balance. I did use just straight chips on an old smokey before and the taste was a bit off and overpowering from the whiskey flavor. I would recommend using them sparingly and not dumping handfuls upon handfuls in the smoker. Just my $0.02, hope it helps.

StickPig,thank ya padner! That's what i was lookin to find out.I kinda thought they might be too strong straight up but didn't know if it would be a good flavor.They dang sure have the whiskey in em'.I'll start out mixing and adjust from there.I even thought about puttin couple in my jaw and suck on em like a chew. I used these chips while smoking a tri-tip this Sat. It turned out Ok. I won't be using them straight up again though. Using them in moderation with other woods is probably the way to go.
I've had much better results with tri-tip when using either Mesquite or Pecan. I think Hickory would work real well too and that's what I'll be using next time I smoke a tri-tip. |

I agree,thanks!
I finally got to try these JD oak whiskey chips.I fired up the barrel charcoal grill and cooked two extra large,thick choice sirloin steaks.I used salt and pepper only to season with and a pat of butter on each one.I added a small handful of chips on top the coals right before i threw the steaks on.I don't know now if i will ever use them to smoke with BUT.....they are PERFECT for grilling steaks.We really liked the flavor it gave the grilled meat.As a matter of fact,i will probably keep them on hand just for steaks. |

I use these quite a bit for ribs and shoulders. I use them straight up for the most part and I love the smokey bourbon flavor it gives the meat.
I've mixed them with apple and hickory and have had good results too. I prefer them alone though. Doesn't seem to overwhelming to me and I've never had anything but great compliments from those who have tried them. |

I have a little bit left of this and by far it's the best chips out there. I also thought about chewing on some myself...

They do make a charcoal out of the barrels too. I liked the chips when I've used them.

Wow! Did not know that.I've gotta try some of these new products.Thanks for posting about the Tabasco barrel chips because if i would of seen them in a store, i would have bought 'em.

Yeah they are Ben.I went and bought another bag of them.At first,the alcohol smell was so strong i didn't think i would like the smell of the smoke.Wrong! These chips are really good sprinked over coals when cooking a big ol steak imo. |
