Are you allowed to sample more than once? Meaning, if the box has sliced brisket and burnt ends in it, do you taste both for your score card, or is it one or the other??

As Uncle Bud says, if it's in the box it is there for tasting!

Chicken, I've seen mixed thighs and drums, breast and thighs, breast thighs and drums, as well as all breast, all thighs, and all drums.

For most people they can get the best results with thighs, and so all thighs has to some extent become the standard.

Ribs, generally people do a single style, but I have been at a couple of contests where people turned in Hollywood cut ribs, but they did not have enough so they added a couple of singles.

Pork can be sliced, pulled, shredded, chopped, chunked and you can get any and all in the box, often you may get, pulled, sliced and chunk in the same box.

Brisket is mostly sliced from the flat, or cubed from the point, in some area's of the country you can get sliced through both the point and the flat, but other areas it's only the flat as judges don't like the idea of eating the fat, (not that you are really forced to eat any part you don't want to eat).

A good judge will take a portion of each style of meat from the box and put them on their judging plate, chicken first then at 30 minute intervals, ribs, pork shoulder and brisket. If there are chicken thighs and cut breast meat, they should take a thigh and some of the breast meat, they take a bite of each, and judge for taste and texture tenderness, if the thigh was a solid 8 and the breast a not so good 6 you will probably score a 7, ((8 + 6)/2 = 7), if you put 3 styles of pork in a box, it could be ((8 + 8 + 9)/3 = probable 8.

If it's in the box, it is to be sampled. I average all different types to come up with an overall score.

Thanks for all the feedback guys!! Just wasn't sure if there was a rule that you could only sample 1 piece, great to know.

Hollywood cut (historically called a Cadillac cut) is when you maximize the amount of meat on a bone by slicing next to the adjacent bone instead of down the middle. Of course you will lose every other bone in the rack because there will be no meat on it after trimming.

I have seen it presented twice so far this this season out of the 10 comps I have judged. The ribs do not look "normal" with this cut and I think is a risky entry.
