Ok gang
I have a couple belly rupture suckling pigs that we would normally euthanize and compost. However, since I've got my new smoker tuned in pretty well, I think it might be time to try to cook these bad boys...
I have 2 that are about 12-14 lbs and 1 that's 20ish lbs.
I've never attempted suckling pigs, roasters, or whole hog in any way shape or form, so I'm gonna need some serious guidance. Any help is much appreciated. |

I have a fat little runt (30lb) that's going to feed the family for the fourth of July, I'm gonna marinade him in an ice chest for 24 hours in a Cuban mojo soak of ICE, sour orange juice lots of garlic crushed, a few heads of cilantro and lots of black pepper, injecting as I go, I am gonna skin and remove the head for cooking and to keep the wife happy.
I mop the oj mix hourly while smoking. I call it done when the meat pulls like I want it. _________________ Jp
