Well, Im having my dad over for fathersday today, asked him what he wanted and he said brisket...So Im cooking my first today. It was about a 6lb flat after I trimmed it. Its been on the smoker since about 4:30am, currently at 125 degrees per my digital probe. Im hoping it will be done around 2pm
This site is great and has lots of helpfull info on how to go about cooking a brisket. That said, I have two racks of ribs that will go on around 9:30 just in case lol. I have read a brisket can be tough to nail on the first try...Wish me luck! |

| Just foiled it at 162. Its looking, and smelling real good! will try to take pics when its done. |

Took it out at 188. I wanted to go to 195 but my probe slid in and out fairly easily and the guests were getting hungry. It was a bit too salty, but quite tender and juicy. All the ribs were gone in minutes, and theres about five slices of brisket left. Dad enjoyed it so im happy with the result...just a little less salt next time.
